Apple Streusel SCOOPED.

5 cups Heavy Whipping Cream (or a quart+1/2 pint)
3 eggs
1 cup of sugar
1 1/2 tbl Vanilla
pinch Salt

For apple filling:
1 Granny Smith Apple
1/2 cup flour
2 tbl butter -cold!
1/2 cup sugar + 1 tbl
1 tsp cinnamon (I used Vietnamese) + 1/2 tsp

Dice apple into VERY small pieces, toss with 1tbl sugar and 1/2 tsp cinnamon (just to coat apples) spread thin on one half of tin foil covered cookie sheet. Cut butter into flour, sugar, and cinnamon mixture, (I used a food processor- went super quick). Spread enough mixture to cover top of apples, the cover the other half of cookie sheet with streusel topping so it gets crunchy.
Bake at 350° for a few minutes - till apples are cooked. When mixture is done baking mix crunchy topping with cooked apples after it has cooled a bit.


While apples are baking....
Whip eggs, vanilla and sugar together till fluffy. beat in cream and salt. Put in mixer so it freezes! When mixture is about 5 minutes from done, drop in pieces of apple mixture.
